Ingredients

30 mins
  1. 16 largescallops, rinsed well
  2. 4 tspsugar (or 8 teaspoons sugar substitute)
  3. 4to 6 fresh minced garlic cloves (or 1 to 1 1/2 teaspoons minced garlic in a jar)
  4. 4green onions, minced
  5. 2 tsppaprika
  6. 2 tbsplemon juice
  7. 1/2 cupplus 2 tablespoons olive oil, divided
  8. 1pepper to taste

    Wash scallops and pat dry.

  2. 2

    Brush with 2 tablespoons olive oil.

  3. 3

    Combine the sugar, garlic, green onions, paprika, 1/2 cup olive oil, lemon juice and pepper.

  4. 4

    Mix well.

  5. 5

    Heat your grill or grill pan to high heat.

  6. 6

    Place the scallops on the grill for 3 to 5 minutes per side, basting generously and frequently with the prepared sauce.

  7. 7

    You want the scallops to be lightly browned on each side.

  8. 8

    Be careful not to leave them on too long, they should be firm but not overcooked.

  9. 9

    Overcooking can make them rubbery.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
