Ingredients

  1. 4Racks of lamb (1 to 1-1/2 pounds each) trimmed
  2. 2 tbspDijon mustard
  3. 1 cupSoft bread crumbs
  4. 1/4 cupMinced fresh parsley
  5. 1/4 tspSalt
  6. 1/4 tspPepper
  7. 1/4 cupButter, melted
  8. 1 cloveGarlic

Cooking Instructions

    Place lamb in rack in a greased large roasting pan; brush with mustard.

    In a small bowl, combine the bread crumbs, parsley, salt and pepper. Press onto the meat.

    Combine butter and garlic; drizzle over the meat. Bake, uncovered, at 350°F for 35-40 minutes or until meat reaches desired doneness
