Ingredients

6 servings
  1. 1 smalleggplant, aubergine
  2. 14 1/2 ozdiced tomatoes
  3. 1/2 largeonion, chopped
  4. 1/4 tspsalt
  5. 1/4 tspground black pepper
  6. 1/4 tspgranulated garlic powder
  7. 2 smallred bell pepper, chopped
  8. 2 tbspghee

Steps

  1. 1

    Heat the ghee add onions and peppers

  2. 2

    Peel and dice the eggplant

  3. 3

    When the onions and peppers are soft add the eggplant. Cover , and simmer 7 minutes.

    Add tomatoes, pepper, garlic and salt

    Simmer 10 minutes covered your done. Serve, hope you enjoy!
