Crust: Crush graham crackers in a blender. Put into a bowl, add the sugar and blend well. Stir in melted butter. Press mixture firmly and evenly agains bottom and sides of pie pan. Bake at 170ºC for 20 minutes. Set aside.

Filling: Cream cheese and butter. Blend in flour, sugar and egg. Stir in milk, lemon juice and rind, mixing gently until well combined. Pour into prepared crust. If desired, you can sprinkle top with cracker crumbs. Bake at 170ºC for 25-30 minutes.

Decorate with round thin slices of lemon. Serve chilled. Share and enjoy!
