Ingredients

5 servings
  1. 1 lbQuality Italian Sausage
  2. 3Garlic cloves, pressed
  3. 1 eachRed, Yellow and Green Bell Pepper, cut into vertical strips
  4. 2Sweet Onions, sliced
  5. 2 tbspExtra Virgin Olive oil
  6. 24 ozCan of Diced Tomatoes with Basil, Garlic & Oregano
  7. 3 pinchCrushed Red Pepper & Oregano
  8. 1 dashSalt & Fresh Cracked Pepper

Steps

30 mins
  1. 1

    Preheat oven to 400°

  2. 2

    Poke each Sausage with a Fork 4-5 times

  3. 3

    Heat a Duch Oven Pot or a 4 quart pot with Lid that can go in the oven over medium/low heat. Add Sausage and cook them until there nice and brown all over. Remove Sausage from pot and set aside. Sausage will finish cooking in the oven

  4. 4

    Add Olive oil to pot then Onions. Season with Salt & Sauté until translucent

  5. 5

    Add Garlic & Diced Tomatoes. Season with Salt & Fresh Cracked Pepper

  6. 6

    Add Crushed Red Pepper, Oregano & All 3 Bell Peppers tossing them around until they're wilted

  7. 7

    Slice Sausage into Thirds & Add back in pot bring to a boil and Simmer for 10mins then put the pot in the oven

  8. 8

    Cook until most of the liquid has evaporated and peppers are tender about 30-40mins

  9. 9

    Serve on a plate, Have it with Pasta, Rice or Stuff it in a Sandwich Roll with Cheese! ;)
