Italian flat beans are a great alternative to string beans when in season. They have less skin & a bigger bean. This recipe is a great side dish for a bbq or picnic as it does not contain mayonnaise & will not spoil. It is delicious served chilled or room temperature.

1 lbItalian flat beans
1 lbGolden Yukon potatoes
1/4 cupFresh parsley rough chop
1/4 cupscallions chopped
1/2 cupolive oil, extra virgin
1 tbspwhite vinegar
1 tbspFlat bean water
salt & pepper

Cook flat beans & Potatoes in separate pots of boiling water. Cook potatoes u til fork tender & flat beans until tender.

Strain both & save a lol bit of the flat bean water.

Combine all the ingredients in a bowl & mix gently & serve room temperature or chilled.
