Season the monkfish with salt and pepper, then dredge both sides in flour.

Once coated in flour, heat olive oil in a skillet over high heat and sear the monkfish on both sides.

After searing, place the monkfish in a baking dish and bake at 350°F (180°C) for 25 minutes.

While the monkfish is baking, heat olive oil in a skillet and sauté the garlic, sliced thin. When the 25 minutes are up and the garlic is golden, remove the monkfish from the oven and pour the garlic and oil over the top. Sprinkle with a little parsley.
