Pantry-raid Vegetarian Pumpkin Chilli

Love a big ol' bowl of chili! This one is only 63 calories per 1 cup serving. (Not even gonna lie, I eat a 2 cup serving) I raided my canned goods one day out of desperation & concocted this. Even my carnivore husband loves it. Great for freezing! Yes, it's spicy, but you can adjust that of course if you like things tamer

Quick Vegetarian 3-Alarm Black and Red Chili Quick Vegetarian 3-Alarm Black and Red Chili
I was vegetarian for years, so I know my way around the options. I came up with this chili because I like tomato-based chiles and black beans. The TVP and soy sauce provides the umami and familiar texture of ground beef. My kids (10, 8, 7, and almost 2) rate a three as just hot enough to require a glass of milk to go with it, so put on your big kid pants and eat up! Sean -

Zucchini adds a mediterranean flavor to this tex mex dish. Corn would be a great addition and you can serve it over rice or simply as a stew :) red.queen -
Vegetarian Chili Vegetarian Chili
I attempted to make a vegetarian chili by referencing a recipe that my husband found. You can use any kind of vegetables. I recommend keeping the kidney beans, corn, mushrooms, and onions, but the rest of the vegetables can be varied. Throw in many kinds of leftover vegetables! Recipe by popo cookpad.japan -
Slow cooker pumpkin chili Slow cooker pumpkin chili
If you do not like pumpkin spice flavors this is not for you! Lol 😂 you could leave the pumpkin stuff out. I used hamburger meat instead of turkey. This slow cooked all day . This goes have an after taste of pumpkin spice, maybe i used to much lol 😂 idk 🤷♀️. I used my smaller crockpot for this one. I also used only half a can of pumpkin as i was very skeptical 🤨 on this . Think i used to much spice.. just a different way for chili and finding was to use the can pumpkin i had . Iam not a fan of pumpkin spice stuff but tried it out anyways. family style -

Vegan Chili Vegan Chili
We were hosting a get together for Sunday football and several of our invited guests don't eat meat. 2 of them were vegan so I promised I would have options for them. I really started over thinking it because I had never made vegan recipes... meatless yes, but not vegan. Then I started to think of football faves that I enjoy. Then it hit me... CHILI! Chili is one of my all time favorite foods especially during the fall and winter. I made a vegan version and let me tell you... you won't miss the meat. Everyone at the party ate it and loved it :-)I made this the day before and then just heated it in the crockpot the next morning. Cooking with Kimberly Wood -
