Love a big ol' bowl of chili! This one is only 63 calories per 1 cup serving. (Not even gonna lie, I eat a 2 cup serving) I raided my canned goods one day out of desperation & concocted this. Even my carnivore husband loves it. Great for freezing! Yes, it's spicy, but you can adjust that of course if you like things tamer

Ingredients

  • 1 canRotel, Chipotle flavor (can substitute mild Rotel)
  • 1 can (15 oz)Black Beans
  • 1 can (15 oz)garbonzo beans (really any kind of bean you prefer)
  • 1 canchili beans (however mild or spicy you like)
  • 1 can (7 oz)El Pato Mexican tomato sauce
  • 1 can (15 oz)tomato sauce, no salt added
  • 1 can (15 oz)diced tomatoes, no salt added
  • 1 canPumpkin puree
  • 1large onion, diced
  • 1 PKGreduced sodium chili seasoning
  • 1sweet potato, diced
  • 1 cupdiced carrot
  • 2 C.Water
  • 1 T.Ancho chili powder
  • 1 T.Smoked paprika
  • 1 (7 oz)can diced green chillies

    Add all ingredients to stock pot, simmer on low for an hour for flavors to come together.
