Love a big ol' bowl of chili! This one is only 63 calories per 1 cup serving. (Not even gonna lie, I eat a 2 cup serving) I raided my canned goods one day out of desperation & concocted this. Even my carnivore husband loves it. Great for freezing! Yes, it's spicy, but you can adjust that of course if you like things tamer

Ingredients

12 (1 cup)
  1. 1 canRotel, Chipotle flavor (can substitute mild Rotel)
  2. 1 can (15 oz)Black Beans
  3. 1 can (15 oz)garbonzo beans (really any kind of bean you prefer)
  4. 1 canchili beans (however mild or spicy you like)
  5. 1 can (7 oz)El Pato Mexican tomato sauce
  6. 1 can (15 oz)tomato sauce, no salt added
  7. 1 can (15 oz)diced tomatoes, no salt added
  8. 1 canPumpkin puree
  9. 1large onion, diced
  10. 1 PKGreduced sodium chili seasoning
  11. 1sweet potato, diced
  12. 1 cupdiced carrot
  13. 2 C.Water
  14. 1 T.Ancho chili powder
  15. 1 T.Smoked paprika
  16. 1 (7 oz)can diced green chillies

Cooking Instructions

1 hour
  1. 1

    Add all ingredients to stock pot, simmer on low for an hour for flavors to come together.
