Ingredients

20 minutes
1 Main/2 Sides
  1. 400 gTin of Chickpeas (drained)
  2. 1Medium Red Onion
  3. 2Medium Ripe Tomatoes
  4. 2 cmPiece of Fresh Ginger
  5. 6Garlic Cloves
  6. 1Small Green or Red Chilli
  7. 2 tbspLemon Juice
  8. 1 tbspMint Sauce
  9. 1 tspGaram Massala Powder
  10. 1 tspTurmeric
  11. 1 tspGround Coriander
  12. 1 tspCumin
  13. 2 tbspOlive Oil

Cooking Instructions

    Empty the Chickpeas in to a sieve, rinse and leave to drain.

    Very finely chop your Red Onion, Garlic, Ginger and Chilli and put in to a mixing bowl.

    Now dice up the tomatoes, seeds and all, in to small pieces (no bigger than 1cm) and add to the bowl.

    Put 2 tbsp of Olive Oil in to a saucepan with the hob on a medium heat.

    Now to the mixing bowl add the Mint Sauce, Lemon Juice and all of the Dry Spices plus a pinch of Salt & Pepper and give it a stir. (This can now be kept in the fridge for a day if you wanted to prep in advance)

    Now your Oil should be hot... Empty the contents of the bowl in to the Pan and Cook, stirring regularly, for 4-5 minutes and until you have an aromat paste. Now add a Quarter Cup of Water and the Chickpeas and cook for a further 10 minutes until you feel you have a good sauce consistency - Add more Water if you feel necessary.

    Serve as a Main or a Side, however you like.... Even try my Red Onion Bhaji Recipe to accompany it!!
