I had heard about pies being made as single serve pies in muffin tins. I loved the idea, they are great for a party, holiday and then the big bonus is they can be frozen and also packed in lunches for work or school. I Adapted my full size apple crisp for these.!

I came up with a mildly sweet cake that has a refreshing sweet and sour taste from the juicy baked apples and the acidity of the lemon. It's so easy to make too. The apple and lemon are rich in vitamins besides.If using margarine, you can make these quickly and easily. Microwaving the apples makes it easier than making apple pie. Since these have less sugar than usual, they're lower in calories too. You only use about 3/4 of the apple, so just put the rest in your mouth.Kids love these little cakes. It is sometimes hard to use up one whole Kabocha. So instead of a side dish, I tried turning kabocha into one of my favorite sweets. My kids love the sweet kabocha cake and sometimes end up getting too full before dinner time! Be careful not to eat too many. Even men and elderly people enjoy them. You can bring them to your office and people will love them!If you peel off all of the kabocha skin, the finish will be very pretty with the kabocha color shown in the picture. I got this recipe from a website that I loved. Love this cupcakes, they are moist and delicious!!!

I love pineapple upside-down cake, so I thought it'd be neat to come up with an individual-serve cupcake recipe. I did not have the cherries on hand, so I made them without. Next time I will add them though!

I made this for Sunday Brunch at my church and everyone loved them. They were miniature upside down cakes and looked so pretty. The glazed pecans are a delicious addition to the cake.

My daughter Sarah came up with this idea as we were browsing recipes for Thanksgiving. We always make pineapple stuffing so this is a fun version that will also look pretty on the table!
