Ingredients

4 servings
  • 2 largeChicken breasts
  • 1 canPineapple (you could always use fresh)
  • 1 largeRed bell pepper
  • 1 largeYellow bell pepper
  • 1 cloveChopped garlic
  • 3 tbspLight brown sugar
  • 4 tspCorn starch mixed with 4 teaspoons cold water
  • 3 tbspRice wine vinegar
  • 1/4 cupChicken stock
  • 2 dashDried red pepper
  • 1Salt & pepper
  • 3 tbspOil

Steps

  1. 1

    Take a large skillet, add oil heat it up. Add chicken (cut into strips or chunks) with chopped garlic and lightly brown.

  2. 2

    Removed chicken and add chopped red & yellow bell peppers cook for 1 minute until soft.

  3. 3

    Then bring to simmer the brown sugar, pineapple juice, pineapple chunks & rice wine vinegar (can sub white wine vinegar) & chicken stock.

  4. 4

    Once reduced add the corn starch mixture slowly but keep stirring. Then add the chicken strips and cook for 5 minutes.

  5. 5

    Serve over rice👌(Hint: you could top with bottled sweet and sour for an extra kick)
