Ingredients

  1. For the chicken:
  2. 500 mlvegetable oil for frying the chicken
  3. 250 grboneless chicken thigh meat, diced 3x3 cm
  4. 1/2 tspsalt
  5. 1/4 tspwhite pepper powder
  6. For the batter:
  7. 4 Tbspall purpose flour
  8. 60 mlice water
  9. For the coating:
  10. 4 Tbspall purpose flour
  11. 1 Tbsprice flour
  12. 1 Tbspcornstarch
  13. 1/4 tspwhite pepper powder
  14. For the sauce: (mix together in a small bowl)
  15. 3 Tbsptomato ketchup
  16. 1 tspWorcestershire sauce
  17. 1 Tbspoyster sauce
  18. 1 Tbsphoney
  19. 1/4 tspwhite pepper powder
  20. Other ingredients:
  21. 2 Tbspvegetable oil
  22. 3 clovesgarlic, minced
  23. 1/4onion, diced
  24. 1/2red chili pepper, diagonally cut
  25. 1/2cucumber, cut out the seeds, diagonally cut
  26. 150 grpineapple, sliced
  27. 1/2red bell pepper, sliced
  28. 1 tsprice vinegar
  29. 50 mlwater
  30. 1 tspcornstarch mixed with 3 Tbsp water
  31. 1 stalkgreen onion, diagonally cut

Cooking Instructions

  1. 1

    Season the chicken with salt and pepper. Set aside for 15 minutes.

    Dip the chicken into the batter ingredients. Coat evenly with flour mixture. Shake the excess flour off.

  3. 3

    Deep fry the chicken until crispy and golden brown. Remove from the pan. Set aside.

    For the sauce:
    Heat the vegetable oil in a wok over medium heat. Sauté garlic and onion, until fragrant.

    Add sauce ingredients and white pepper powder. Pour water. Mix well. Bring it to boil.

  6. 6

    Add red bell pepper, cucumber, and pineapple. Mix well.

  7. 7

    Add rice vinegar. Add the cornstarch mixture and continue to cook until thickened. Test the taste.

    Add green onion and mix well again.

  9. 9

    Toss in the chicken and do a few quick stirs.

  10. 10

    Serve immediately with warm steamed rice. Yum! 😋
