Steps

Cut the boiled eggs into two halves - Remove the egg yolk and keep it in a bowl

Heat oil in a pan on medium flame - Add 2 tbsp oil, when hot add onions and saute until it turns light pink

Add tomatoes and give it a mix - Add turmeric powder, red chilli powder, cumin powder, garam masala, green chilli, coriander leaves and cook it for a minute

Now add the egg yolks and mix until well combined - When mixed add salt as per taste

The masala stuffing is now ready - let it cool for sometime - Once the masala is cooled down, add grated cheese - it's optional - Now remove it in bowl

Fill the stuffing in the egg white - Do not over fill the egg white with the stuffing - ready to fry - Add salt and red chilli powder in raw eggs and beat it well

To fry the eggs heat oil in a pan on medium flame - Dip the stuffed egg in the beaten egg and fry it - Fry both the side - do not over fry it - When fried remove it in a plate - fry the remaining eggs in a similar manner

Eggs are fried and ready to serve - Stuffed masala egg is ready, sprinkle some chat masala and coriander leaves - Serve it with tomato or schezwan sauce
