Brush ribs lightly all over with mayonnaise, rub with spice rub and cover tight and refrigerate 10 to 12 hours.

Preheat smoker to 250°F and fill drip pan halfway full with apple juice or water. This help keep the ribs moist during cooking.

Bring ribs to room temperature, about 1 hour, and add meat side up in single layers on racks in smoker over the drip pan. Reduce smoker temperature to 225°F and add wood chips. Smoke for 3 hours adding additional wood chips as needed to make smoke.

Remove ribs from smoker, brush with barbecue sauce, cover each sauced rib rack tightly with heavy duty foil.Return to smoker for 2 more hour.

Remove ribs from smoker and let rest at room temperature in foil for 30 minutes.
