First, prepare the cream. In a pot, combine the milk, sugar, and cornstarch. Stir continuously until it boils. Add the cheese and stir until it melts, then add the orange blossom water.

Next, prepare the knafeh. Shred the knafeh into small strands and place it in a baking pan. Add the ghee and mix until fully absorbed. Divide it into two parts. Grease a baking pan with ghee, press the first part firmly, then add the cream, and cover with the second part, pressing it down. Bake in the oven on the middle rack at 350°F (180°C), baking from the bottom only.

Prepare the syrup. In a pot, combine the sugar and water. Once it boils, add a squeeze of lemon and the orange blossom water.

Once the bottom is golden, grease another baking pan, flip the knafeh into it, and return to the oven for ten minutes to brown the other side. Remove from the oven and pour the syrup over it.
