Bitterballs (Bitterballen/Dutch Meatballs)

This is absolutely a favourite everywhere. What makes it so great, is that you can chop and change the ingredients to whatever you want. The original recipe only has meat, salt, pepper, parsley and nutmeg in it, but I love it with onions and mushrooms. It is fantastic served hot with wedges and creamy garlic sauce! Try it without the beef stock as well using only milk and adding a little chilli for some kick. Divine!

Ingredients

  • 3 tbspButter
  • 3 tbspPlain Flour
  • 1 cupMilk
  • 1/2 cupBeef Stock
  • 1 cupMinced Meat
  • 1/2 cupGrated Cheddar Cheese
  • 2 mediumMushrooms (Finely Chopped)
  • 1/2Onion (Finely Chopped)
  • 2Eggs
  • 1Salt and Pepper
  • 2 cupBread Crumbs
  • 1Oil (For Frying)

Steps

  1. 1

    Fry the onion, mushrooms and minced meat until cooked.

    In a large saucepan, melt the butter and stir in flour until smooth. Gradually add the beef stock and then the milk until the sauce have thickened. Add the salt, pepper and cheese.

    Mix in the cooked onion, mushrooms and minced meat thoroughly. Refrigerate untill chilled.

    Place bread crumbs in a small shallow bowl and in another bowl, whisk the eggs and milk together.

  5. 5

    Roll the chilled thickened sauce meat mxture into balls and cover evenly in bread crumbs. Dip in egg mixture and coat once again in bread crumbs.

    Heat oil in a pan and fry the balls until golden brown. Place on paper towels to help drain the oil and serve hot.
