Pollo Mariachi

This recipe was inspired by my cousin who would try to have something cooked for me between work and school. She said she just whipped up something quick (which I like) and it was good enough to give it the attention it deserves! So with a little more effort, this is what I've come up with. Hope you all enjoy this as much as I do!

It's just this simple. Clean & trim chicken & place in a large casserole dish. Season with the taco seasoning. Julien peppers and onions & spread over chicken. Chop cilantro & throw that in. Crumble up the chorizo & spread evenly throughout the dish. Pour in the enchalada/taco sauce & salsa to cover the chicken. If you want it more chunky, add the diced tomatoes. Salt & pepper to taste. Cook uncovered for about 45 minutes @ 400°.

CHEESE PLEASE!!! If cheese is what you crave, add a fine shred cheese. I like a Mexican blend or fiesta blend of cheese, but feel free to use whatever cheese you want. Just plate the food & melt the cheese in either the oven or microwave. ENJOY!

Creamy and spicy, yet with a sweetness and great balance of southwestern flavor! This dish was served to my husband when in Mexico at a home of a business friend. He liked it so much and found it so different that he had them write out the recipe for me to make at home. It’s a favorite for us, simple but delicious! fenway -

Pollo al Chilindrón (Chicken Chilindrón) Pollo al Chilindrón (Chicken Chilindrón)
Given my love for food from Spain, I took special note when I read about this in Milk Street Magazine. Seems like a cousin of Basque Piperade, but easier and some differences in key ingredients. There's varying opinion on origin (Aragón, Navarra, País Vasco???) and whether there's a proper original recipe or not. Well, let's not stress out too much ... here's a place to start! I love cooking based on theory and trying out new things, especially when based off inspiration from other recipes. I've been addicted to the most recent cookbook in my collection, The Oh She Glows Cookbook by Angela Lidden (if you love yummy, healthy vegan food - or even if you aren't vegan - you MUST pick this book up!!!). I had just finished making a soup from this book and it was time to make dinner. Taste buds salivating from the smells of chilli powder and cayenne pepper, I whipped up this concoction using ingredients I already had in my kitchen. Let's just say both mine and my boyfriend's tastebuds (and bellies) have been so satisfied with this recipe, I had to make it a second time this week, we were craving it so much. Hope you enjoy it as much as we do :) Erin Carissa
