A friend of mine was in England preparing a meal for friends & family & wanted an appetizer. I made these here in the states & shot the picture & sent it to her. She made it where she was & agreed it was easy. This is now something we serve whenever a hi day comes up & we are serving trays of finger food

Ingredients

8 servings
  1. 1 smallbag miniature bell peppers
  2. 1/4 lbGround beef
  3. 2 cloveGarlic chopped finely
  4. 1Leftover chopped button mushrooms & onions
  5. 1 cupLeftover rice
  6. 1 tspOil for drying beef & vegetables
  7. 1Spray for baking pan
  8. 1Egg - beaten (to bind ingredients)

Cooking Instructions

  1. 1

    Take one teaspoon oil & sauté the burger, garlic. Add onion & much room & cup of rice. When everything is heated through set aside to cool

    When the stuffing ingredients are cooling - cut opened each small pepper & clean the insides

  3. 3

    Stuff each pepper to the top & place each into a pan which has been sprayed with coconut oil or cooking spray

  4. 4

    Bake the peppers in the oven at 350°F for 30 minutes
