Ingredients

6 servings
  • 100 gmscarrot (chopped 1" piece)
  • 100 gmsbeans (chopped 1" piece)
  • 50 gmsbottle gourd (chopped 1" piece)
  • 100 gmsbrinjal (chopped 1" piece)
  • 100 gmspotatoes (chopped 1" piece)
  • 50 gmsdrumstick (chopped 1" piece)
  • 100 gmscauliflower (cut into florets)
  • For paste
  • 1/2coconut (grated)
  • 6green chillies
  • For tempering
  • 200 gmscurd (beaten)
  • 2-3dry red chillies
  • 6-8curry leaves
  • 1 tspmustard seeds
  • 1 tbspoil
  • to tasteSalt
  • to taste chilli powder

Steps

  1. 1

    Make a paste of coconut and green chillies.

  2. 2

    Wash all chopped vegetables.microwave (covered) in a micro safe bowl with 1/2 cup water at 100 % power for 9 - 10 mins.

  3. 3

    Add microwaved vegetables, prepared coconut and chilli paste, beaten curd and salt and pepper.microwave (covered) at 60 % power for 6 mins.

  4. 4

    In another microwave safe bowl microwave oil at 100 % power for 30 secs. Add mustard seeds, dry red chillies and curry leaves.microwave at 100 % power for 2 mins.

  5. 5

    Pour this tempering over cooked vegetables and microwave for 2 mins.at 100 % power.

  6. 6

    Allow to stand for 5 mins.

  7. 7

    Serve hot with poories and rice.
