Ingredients

4 servings
  1. 1/4 cbutter
  2. 1/4 cflour
  3. 1 quartheavy cream(or 8 oz h.c. and 8 oz whole milk)
  4. 1/2 cuppecorino romano cheese (+ some for topping)
  5. 14 ozroasted turkey breast
  6. 4 sliceTexas toast, crusts trimmed*
  7. 4 slicecrispy bacon
  8. 2roma tomatoes, sliced
  9. 1salt, pepper, & nutmeg to taste
  10. 1paprika & parsley to taste

    In a 2 Qt. saucepan, melt butter and slowly whisk in flour until it forms a thick paste. Continue to cook on med heat for 2 minutes, stirring frequently.

    Whisk heavy cream into mixture, bring to simmer for around 2min.

  3. 3

    Remove sauce from heat and slowly whisk in pecorino romano cheese until the Mornay sauce is smooth.

  4. 4

    Add salt, pepper & nutmeg.

  5. 5

    Assemble Brown using bread, turkey, tomatoes. Pour sauce over all. Sprinkle with additional cheese.

  6. 6

    Place in oven at 350°for about 20min or until cheese is brown and melted.

  7. 7

    Top with bacon. Sprinkle with parsley and paprika and serve.

    I have used artisan rosemary bread as well for an added pop of flavor.
