  1. recipe
  2. 900 gramsbraising steak - cut into 5cm squares.
  3. 2 tbspOlive oil.
  4. 1 mediumonion - sliced
  5. 1 tbspplain flour
  6. 425 mlred burgundy (or other red wine or dry cider)
  7. 2 clovegarlic - chopped
  8. 2fresh thyme
  9. 1bay leaf
  10. 350 gramsshallots
  11. 260 gramscubetti pancetta or 225g smoked or unsmoked bacon bought in one piece then cut into cubes.
  12. 110 gramsdark-gilled mushrooms, cut into chunks.
  13. 1salt and freshly ground pepper.

    Bring half the olive oil to sizzling point in the casserole pan and sear the beef, a few pieces at a time, to a rich dark brown on all sides. Using a slotted spoon, transfer the meat to a plate as it browns. Next add the sliced onion to the casserole pan and brown that a little too.

    Pour the rest of the olive oil into a small frying pan and fry the shallots and bacon to colour them slightly. Add to the casserole pan, together with the mushrooms, put the lid on and cook for a further hour.
