Kerala egg roast

A traditional dish from the South Indian state of Kerala, also called “God’s own country”. Home to various authentic and mouthwatering cuisines, both vegetarian and non veg. Cooking Instructions

Heat oil over medium flame in a non stick pan/wok

Add fennel seeds, ginger garlic paste and black pepper powder and sauté for 2 minutes.

Throw in the onions, curry leaves, green chillies, salt. Mix well. Cover and cook till onions turns translucent.

Add the tomatoes, sugar,dry spices and cook covered till tomatoes soften
- 5
Add half cup water and bring it to boil
- 6
Add the boiled eggs and cook covered till the gravy has dry roasted(check in between so as to avoid burning/overcooking)

Check the seasoning and adjust accordingly and bring the curry off the heat.

Serve hot with rice/chapatis/Nans/Kulchas, etc

Tips: coconut oil is for the authentic taste of the dish. You may choose to use the cooking oil of your choice too

I've always enjoyed this in streets of South India but never made it all these years. Now the Indian Government has issued a ban on beef in Bombay stating "Religious" reasons as Cow is considered holy by some Hindus. So had to try it once before the ban is official.Can't buy Beef easily anymore without taking a risk of being criminally charged.
