Tori's Crockpot Enchilada Soup

Ingredients

  1. 1 canwhite kidney beans (drain and rinse)
  2. 1 canblack beans (drain)
  3. 1 canpinto beans (drain halfway)
  4. 32 ozcontainer Chicken broth
  5. 1 canechilada sauce
  6. 1 cancorn (drain and rinse)
  7. 1 can (12 oz)shredded chicken (drain and rinse)
  8. 4 ozgreen chiles (drain)
  9. Diced tomatoes (do not drain)
  10. 1/3of a chopped yellow onion
  11. 2bell peppers (i used one red and one yellow) chopped
  12. 2 clovesgarlic (minced)
  13. 2 tsptapatio (or as much as you want, taste as you go)
  14. Cumin (i was heavy handed with it)
  15. Cajun seasoning (1 tsp)
  16. Cayenne pepper ground (1 tsp)
  17. Garlic powder (1 tsp)
  18. Onion powder (a dash)
  19. Salt (a dash)
  20. Shredded cheese (optional)
  21. Sour cream (optional)

Cooking Instructions

  1. 1

    It's actually very simple...add all ingredients to crockpot (doesn't matter what order)

    Mix ingredients in crockpot well, add cheese if you want

  3. 3

    Turn crockpot on high

  4. 4

    Cook for 2 hrs or until hot

  5. 5

    Enjoy!
