Ingredients

20 minutes
4 servings
  1. 4boiled eggs
  2. 2large onions chopped
  3. 1 tbspnginger-garlic paste
  4. 2green chillies finely chopped
  5. 1 tbspnfennel seeds
  6. 1 tbspnBlack pepper powder
  7. 2 sprigscurry leaves
  8. 1 tbspndry spices like garam masala, Kashmiri red chilli powder, coriander powder
  9. 2tomatoes chopped
  10. to tasteSalt
  11. 3 tbspnedible Coconut oil
  12. 1/2 tbspnsugar

Steps

20 minutes
  1. 1

    Heat oil over medium flame in a non stick pan/wok

  2. 2

    Add fennel seeds, ginger garlic paste and black pepper powder and sauté for 2 minutes.

  3. 3

    Throw in the onions, curry leaves, green chillies, salt. Mix well. Cover and cook till onions turns translucent.

  4. 4

    Add the tomatoes, sugar,dry spices and cook covered till tomatoes soften

  5. 5

    Add half cup water and bring it to boil

  6. 6

    Add the boiled eggs and cook covered till the gravy has dry roasted(check in between so as to avoid burning/overcooking)

  7. 7

    Check the seasoning and adjust accordingly and bring the curry off the heat.

  8. 8

    Serve hot with rice/chapatis/Nans/Kulchas, etc

  9. 9

    Tips: coconut oil is for the authentic taste of the dish. You may choose to use the cooking oil of your choice too
