Helen is a good friend of our family. She and her husband often invite us for BBQ and one day we realised that Helen always makes this ‘Tomato Salad’. I copied her salad but I make it without Olive Oil. If you like Olive Oil, you can add it for extra flavour and nutrients, and of course extra calories. I like it without Oil.

Ingredients

4 to 6 servings
  1. 4Ripe Tomatoes *cut into small pieces
  2. 1/2Red Onion *finely chopped
  3. 2-3 tablespoonsFresh Herbs (Basil, Oregano and Parsley) *finely chopped
  4. 1/4 teaspoonSalt
  5. Freshly Cracked Pepper as required
  6. 2-3 teaspoonsBalsamic Vinegar

Steps

  1. 1

    Fresh Herbs are definitely better, but I sometimes use 1 to 2 teaspoons of dry Italian Herb Mix instead.

    Combine everything in a large bowl and serve immediately.
