Ingredients

  1. 4hard boiled duck egg
  2. 2potatoes (cut into lengthwise half moon shape)
  3. 3 tablespoonsonion paste
  4. 1 tablespoonsginger and garlic paste
  5. 1big tomato chopped
  6. 1 teaspooncoriander powder
  7. 1 teaspooncumin powder
  8. 1 teaspoonturmeric powder
  9. 1 teaspoonred chilli powder
  10. 1 teaspoonsugar
  11. to tasteSalt
  12. 4-5 tablespoonsmustard oil
  13. 1 teaspoongaram masala powder

Steps

  1. 1

    Boil the eggs they should be hard boiled. Peel the eggs and make four slits on them. Rub them with pinch of turmeric powder, red chilli powder and salt.

    Heat about 3 tablespoons oil in a pan. Gently put in the boiled eggs in and fry them until their skin is red. Take out the eggs and keep aside.

    Add some more oil to the pan if needed. Add onion paste and saute for couple of mins. Sprinkle about 1teaspoon sugar and fry the onion until the onion is soft and turning light brown.

  4. 4

    Now add the potatoes cut in thin half moon shape. Fry till the potatoes are half done.

  5. 5

    Add ginger and garlic paste, red chilli powder, coriander powder and cumin powder. Sprinkle little water and saute for a couple of minutes.

  6. 6

    Next add chopped tomato and fry till the tomato is all mashed up and cooked. There should not be any raw smell and you will see oil separating from the edges.

  7. 7

    Add about 1 cup of warm water, salt to taste and let the gravy simmer to a boil.

  8. 8

    When the gravy starts boiling, add the eggs. Reduce the heat and let the gravy simmer until it is thick.

  9. 9

    Add garam masala powder and serve with steamed rice.........
