Saute pan over medium high heat, add olive oil, add peppers, onion, corn, jalapeno & garlic

Cook vegetables, stirring often for 10 to 12 min

Season w/ 1/2tspn of salt, remove from heat & place on a plate

In a bowl whisk eggs, heavy cream, 1/2tspn salt & black pepper

In a saute pan add butter & once melted, pour the beaten eggs into pan, use a spatula to scrape the side & bottom to ensure eggs cook evenly

After 2 min, eggs should still be wet add the cilantro, followed by the grated cheese & remove from heat

Fold the eggs over themselves until the cheese is melted & divide between 4 tortillas

Divide the sauteed vegetables between the 4 tortillas

Fold the left & right side over the center and then roll the bottom edge up towards the top
