Prep rice and vegetables by washing and setting aside

Extract coconut milk by blending the coconuts and filtering the milk

Add coconut milk, crushed yellow peppers, chicken stock,seasoning and salt to a pot and bring to boil.

Add rice to boiling mixture and cook for 25 mins or until al-denté

In a wok pan, stir fry carrots, green pepper, bell pepper and onions for 2 mins. Gradually pour in the cooked rice. Mix properly using a spatula and allow to simmer on low heat for 10 mins.

Voila! The food is ready to be served. Meal is best enjoyed with a fruit cocktail. Bon appetite amigos.
