
Roasted Beet and Onion Salad

Heat oven to 425°F. Cut all but 2 inches off beet tops, wash beets.

Place beets and quartered onions in ungreased pan. Sprinkle with salt/pepper and drizzle with EVOO.

Bake uncovered for 40 minutes or until beets are tender. Let cool, peel beets and cut off root ends. Slice beets into 1/2-inch slices. Separate onions into pieces.

Toss beets, onions, basil and vinegar.

Serve at room temp or refrigerate for one hour.
