Separate escarole and rinse well.

place escarole in a large sauce pan with olive oil and cook covered over medium heat.

When escarole starts to wilt add the minced garlic. continue cooking covered for 5 minutes stirring occasionally.

Add the rest of the ingredients and cook until vegetables are tender.

Once done serve as a side dish, or toss with whole grain pasta and serve as a main meal.
