I'm trying a low carb way of eating and have been trying out low carb versions of my favourite meals. This one uses bare naked noodles made from Konjac and I promise it tastes just like the real thing. It doesn't have much flavour of its own though so needs some sauce or something to help with the flavour.

Ingredients

2 servings
  • 1 packBare Nacked Noodles
  • 250 graw king prawns
  • 1red bell pepper sliced
  • I med onion sliced
  • 200 gmixed veg - mangetout, sugar snap peas, stem broccoli
  • 2 tbspcoconut oil
  • Seasoning

Steps

    Rinse the noodles under cold water for a min then add to a pot of boiling water separately. Boil for 2 mins then strain.

  2. 2

    In a frying pan or wok, fry half of the onions with coconut oil and once they start to brown add the prawns and mixed veg.

  3. 3

    Fry for 3-5 mins and then add the peppers and the rest of the onions and all seasoning.

  4. 4

    Add any sauce you choose if you want to ad this point then add the noodles without any water.

  5. 5

    Let simmer for 2 minutes ensuring the prawns are completely cooked.
