
Grilled Fish w/ Chile-Mushroom Sauce

Start rice.

Bring 1 C coconut milk to simmer. Stir in curry paste. Cook 3 minutes, until milk thickens & coconut milk oil rises.

Add fish sauce, sugar, & lime leaves. Stir-cook for 1 minute.

Add remaining coconut milk & all mushrooms. Stir and cook on high heat 5 minutes, until oil has risen again. Take off heat & reserve sauce.

Mix vegetable oil, garlic, and salt in a small oil. Rub fish w/ mixture.

Broil fish 3 minutes per side, until only 1/4-inch remains pink at center.

Serve fish topped w/mixture sauce, red pepper slices, and basil leaves. Accompany w/ rice.
