  1. 4 largechicken breast cut up
  2. 2 cancoconut milk
  3. 1/2stock lemon grass
  4. 2 clovegarlic
  5. 3carrots chopped
  6. 2onions chopped
  7. 2 tspcelantro paste--optional
  8. 1 tbspThai green curry (hot)
  9. 1 tspSambal Olek
  10. 2 boxchicken broth
  11. 1salt and pepper
  12. 1 clovefresh ginger root
  13. 1Rice noodles

    In large pot brown chicken remove and set aside

  2. 2

    Sauternes onions,garlic,ginger and carrots. set aside

  3. 3

    Pour broth into pot beat lemon grass and add all back into pot

  4. 4

    Add Chile spices and salt and pepper simmer until carrots done

  5. 5

    add ceforoconut milk just before serving but do not boil

  6. 6

    cook rice noodles as per directions then serve soup over top.
