In a bowl add maida, ghee, salt and give a mix.

Then add water and knead a tight dough. Let it rest for 10 minutes.

Heat a wok, add ghee, cumin seeds, asafoetida, ginger and Chilli paste. And saute for a minute.

Add dry spices, cumin powder, red chilli powder, amchur powder, and blackpepper powder. And give a mix, then add black salt.

Now add potatoes and give a mix. Add 2 tsp ghee and garam masala powder, salt to taste, peas and give a mix

Switch off flame and add chopped coriander leaves.

Once more knead dough, make a small balls out of it, and roll in oval shape, divide into two equal parts.

Grease with water, make a cone out of half rolled dough, fill with potato filling. And close it all ends.

Heat a oil in pan for frying, oil should be warm, leave Samosa one by one in oil and fry till it's golden brown.
