1 cupwalnut
1 smallbulb fennel with top
1granny smith apple
dressing
1 mediumlemon
1 mediumorange
2 tbspcider vinegar
2 tspdijon mustard
1 mediumfinely sliced shallot
1sugar as needed
1/2 tspsalt
1/3 cupextra virgin oilive oil

toast walnuts till warm in skillet or 350° oven 5-7 mins

combine dressing ingredients and emulsify and add sugar as needed

thinnly slice apple and fennel on a mandoline, soak in water to avoid growing if not use immediately

toss arugula' apple, fennel, and dressing together
5

top with walnuts and fennel fronds
