
Old fashioned shortbread

I have never used a mixer to make this shortbread. My mom always told me it had to be mixed by hand. It's a lot of work, but that's what makes it taste so good :)

Cream butter until smooth. Add flour, sugar and salt. Blend until all ingredients are well mixed. The dough will eventually form a ball and I often have to mix with my hands as it gets closer to being ready.

After dough has formed a ball, gently roll the dough on a floured surface, to about 1/4" thickness. Dough can either be cut into small rectangles, or shaped with cookie cutters. Traditionally, it would be cut into small rectangles. Poke each cookie with a fork before baking. Honestly can't tell you if that helps with air bubbles, or my mom and grandma did it for design 🤔

Bake at 325 for 8-10 min or until very lightly brown on the edges. Take care not to overcook
