Cheesy Au Gratin Hash Browns

Ingredients

6-8 servings
  1. 1 lbpackage of frozen shredded hash browns, thawed
  2. 3/4 cupsour cream
  3. 1 cancream of mushroom soup
  4. 1 cupfiesta blend shredded cheese
  5. 1 cupsharp cheddar cheese
  6. 1/2 cuponion finely chopped
  7. 1/4 cupbutter melted
  8. to tasteSalt and pepper
  9. 2 cupsRitz crackers coarsely crushed (topping)
  10. 2 tbspbutter melted (topping)

Cooking Instructions

    Microwave thawed hash browns in some olive oil for 3-4 minutes to soften

  2. 2

    Grease bottom of 2 quart glass pan with cooking spray

  3. 3

    Mix all non-topping ingredients in large bowl and add to greased pan

  4. 4

    Mix topping ingredients and spread evenly over the hash brown mixture

  5. 5

    Cook at 350 degrees for 1 hour or until crackers turn golden brown

  6. 6

    Note on increasing the recipe: I used an additional half bag of hash browns and added more cheese and sour cream. Cooked at 375 for 1 hour and 400 for 5 minutes to brown a little more. The increased recipe served 12 people.
