saute the onions and garlic in the oil in a saucepan over Med heat until translucent, about 5 minutes. stir in stock and bring to a boil.

add the couscous, cover and return to a boil. removed from heat and let mixture sit for 5 minutes, or until the liquid is absorbed. this can sit, covered for about ten minutes or may be served immediately. fluff with a fork before serving
