Ingredients

4 servings
  1. 4 tbsplemom juice
  2. 4 tbspolive oil plus additional for brushing
  3. 1 tbsporegano, fresh, finely chopped
  4. 1garlic clove, minced
  5. 3/4 tspsalt, divided
  6. 1Coarsely ground black pepper
  7. 1 pintscherry tomatoes, cut in half
  8. 1/2English cucumber, peeled and cut into 1/2-inch pieces
  9. 1/2 smallred onion, thinly sliced
  10. 1 lblarge shrimp, peeled and deveined
  11. 2(8-inch) pita loaves
  12. 1yellow bell pepper, cut into wide strips
  13. 3 ozfeta cheese, cut into 1/2-inch cubes
  14. 6(8-inch) bamboo skewers, soaked in water 15 minutes

Steps

    Preheat grill

  2. 2

    Whisk together lemon juice, oil, oregano, garlic, 1/2teaspoon salt and pepper in a bowl. Pour hafl the dressing into second bowl.

    Add tomatoes, cucumber and onion to dressing in one bowl.

  4. 4

    Add shrimp to dressing in second bowl. Stir until well coated; marinate at room temperture 10 minutes.

    Lightly brush pitas and bell pepper on both sides with oil and sprinkle with 1/4 teaspoon salt and pepper. Grill pitas until browned and slightly crisp, about 2 minutes on eash side, then transfer to a rack to cook (pltas will continue to crisp as they cool). Grill bell pepper until just softened, about 1 1/2 minutes on each side.

    Thread shrimp on skewers without crowding, Grill until just cooked, about 2 minutes on each side.

    Break pitas into bite-size pieces. Remove shrim from skewers and gently stir into tomato mixture with pitas, bell pepper and feta.

    Per serving: 240 calories, 13g fat, 105 mg chol, 16g prot, 15g carbs, 1g fiber, 670mg sodium
