  • 2 cupwhite whole wheat flour
  • 1 1/2 tspbaking powder
  • 1/2 tspbaking soda
  • 1/2 tspsalt
  • 1/4 tspground cinnamon
  • 1/2 cuppacked brown sugar
  • 2 largeegg whites
  • 1 largeegg
  • 1 1/2 cupmashed ripe bananas (from 4 medium bananas)
  • 1/3 cuplow-fat buttermilk
  • 3 tbspvegetable oil

    preheat oven to 350°F. Lightly coat 9" by 5" loaf pan with nonstick baking spray.

    In medium bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.

  3. 3

    In large bowl, with mixer on medium-high speed, beat egg, sugar and egg whites until almost doubled in volume. On medium speed, beat in bananas, buttermilk, and oil until well combined.

    With rubber spatula, gently fold in flour mixture until just combined.

  5. 5

    Pour batter into prepared pan, smoothing top. Bake 1 hour or until toothpick inserted in center comes out clean.

    Let cool in pan on wire rack 10 minutes. Remove from pan and let cool completely on wire rack. Can be stored, tightly wrapped, at room temperature up to 3 days or in freezer up to 1 month.

    Each serving: 170 calories, 4 g total fat (1 g saturated), 4 g protein, 31 g carbohydrates, 4 g fibre, 16 mg cholesterol, 220 mg sodium
