coarsely chop onion, cut chicken into 1/2" bite size

heat 2 tsp oil large pan

fry chicken until golden tinged, about 5 mins Remove chicken to plate

add onion, ginger, garlic to pan, saute stirring often until onion is softened, about 7 mins DO NOT BROWN ONION

add coconut milk, curry paste, cumin and salt. Bring to boil. Core apple, chop. Stir apple into sauce. Boil sauce uncovered till sauce is thickened 8 to 10 mins

slice pepper, stir in chicken, pepper strips

gradually stir in spinach by handful then add mint, wait till spinach is wilted

serve over pasta or rice
