Roasted chicken with cherry barbeque sauce and toasted almonds

Preheat oven to 400°F. Coat a roasting pan with cooking spray.

In a medium saucepan combine the liquid ingredients, the preserves and the spices. Simmer the sauce over medium heat until it bubbles. Reduce heat and simmer for 5 minutes, stirring frequently.

Place the chicken breast in the roasting pan and season with salt and pepper to taste. Pour the sauce over the chicken and cook for 25 to 30 minutes.

Meanwhile place the almonds in a small dry skillet. Toast them for 2 to 3 minutes, stirring them frequently. When the chicken is done sprinkle it with almonds and serve.
