simmer whole chicken in a pot of water until cooked though, then remove from pot and let cool

if there is any scumb on the top of the broth from the chicken skim that off

mean while cut the onion julienne, peel the ginger and slice it thin, and clean and peel the papaya then cut into 1in cubes

after removing the chicken season the broth with chicken base, hondashi, garlic, ginger, hawaiian salt and white pepper, and bayleaves

let the broth mix with the seasoning, bring to boil and taste. add more seasoning to taste, if to salty add water

add the papaya to the broth until cooked but firm. test with and knife or toothpick though

mean while waiting for the papaya to cook shred the chicken

when the papaya is just about ready add the chicken to the pot. boil and pau.
