Preheat your oven to 180 degrees

Grease your baking tin and set it aside.

Add flour, oats, baking powder, baking soda in a bowl mix well and set aside.

Prepare your butter milk. Measure the milk and add the vinegar

In a large bowl add sugar and canola oil. You can use any vegetable oil without flavour. Whisk well till they are mixed and become pale yellow in colour

Beat in your eggs one by one. Add lemon extract at this time.

Once your eggs are well beaten. Start incorporating your flour in bits. Add your butter milk at this point.

Incorporate your flour untill its all soaked. Dont over mix. Dont also be tempted to make batter runny.

Add sultanas

Divide yout batter in cupcakes. Try to place same amount in cupcakes. Put upto 3/4 to give it an opportunity to rise.

Bake for 15 to 20 minutes. Check if fully cooked with a skewer. Insert if it comes out clean you good. If not. Give it some more minutes

Voila. Cool before enjoying
