This is one of my favorite Chutney...it's a srilankan based recipe.. love the flavors of cinnamon, cardamom and curry leaves. It can be used as a side dish or in your tacos and burgers.

This is one of my favorite Chutney...it's a srilankan based recipe.. love the flavors of cinnamon, cardamom and curry leaves. It can be used as a side dish or in your tacos and burgers.
Steps

Clean and chop the pineapple.

Heat oil in a pan add the cinnamon, cardamom,curry leaves,let it splutter.

Add chilli flakes, turmeric powder and kashmiri chilli powder if adding.

Cook on low flame, chilli flakes should not become brown.

Add water and sugar.

Bring it to a boil on a medium flame. Simmer it for 5 minutes.

Add pineapple chopped and salt.

Cook on low flame for 10 - 15 minutes or cook till the water dries off and the pineapple becomes tender.

Allow it to cool and transfer into an air tight container. It can be refrigerated upto 2 weeks.
