Pepes Ayam Kemangi (Indonesian Chicken Dish with Sweet Basil)

I am using chicken and sweet basil in this dish. The aromatic banana leaves and the rather sharp tasted sweet basil leaves allow you to devour the dish using not only your sense of taste, but also your sense of smell.

Cut the chicken into big chunks. Coat the chicken with lemon juice and salt.

Put all the spices in food processor to make spice paste.

On the banana leaf: put the chunks of chicken, the spice paste, and 5 sweet basil leaves and wrap it.

Pre heat the oven into 180 degree and put the wrapped chicken in for 45 minutes.

Serve the pepes on a board. Open the wrap like a present! 😊
