Rinse chicken AFTER HIS INARDS ARE REMOVED/ NECK,GIZZARDS,HEART...Keep and use if u like I toss em!

Cut scotch b's and remove seeds/ I like it HOTT...so I keep them in...Take everything except sugar and chop real fine/If you have food processor mix all that together

After mixing place in bowl/add sugar/oil...then rub your bird...massage it all over even inside the birds cavity.

Bake at 350 for 1 hr covered with foil..uncover then bake for 30 more minutes...baste with liquid in bottom of pan..drippings keep it moist.

When done let rest for 20min....Then serve
