mix first 4 ingredients and scald;

cool to about 110°F

dissolve yeast in 1/4 cup water and add to mixture

sift dry ingredients and dump into wet mixture

mix and beat with a wooden spoon 100 times

turn out onto a lightly floured surface

knead in enough flour to make a moderately stiff dough that is smooth and elastic

shape into a ball; place into greased mixing bowl & turn over

moisten top, cover and let rise until double (about 2 hours)

punch down and turn out onto lightly floured surface; shape into 4 loaves

place each loaf into a greased loaf pan & let rise until double again

bake at 350°F until done; cover top with aluminum foil for last few minutes if necessary to prevent over browning
