soak beans overnight and drain

Place beans in a large heavy pot or oven-proof crock and cover with cold water

Bring to a boil, reduce heat to low, and simmer, stirring occasionally, until the beans are just tender (1-1 1/2 hours)

Preheat oven to 325°F

Add remaining ingredients except turkey to pot and stir to combine thoroughly

Add turkey leg to pot, cover and place in oven for 3 hours, stirring every 30 minutes. Beans will become very tender

Remove cover and cook for 1 more hour

Remove turkey leg from pot, pull meat from bone, cut meat into. bite size pieces and mix with beans

Store in fridge for 5 to 7 days or freeze for up to 3 months. Makes 15 to 20 servings.
