Ingredients

6 servings
  1. 1extra large zucchini
  2. 2 lbitalian sausage (hot or mild, i used one for each boat)
  3. 1red onion
  4. 1bell pepper
  5. 2eggs
  6. 1 1/2 cupwhole wheat italian bread crumbs
  7. 1 pincheach of fresh thyme, basil, oregano
  8. 2 tbspolive oil
  9. 1 1/2 tbspworchestershire sauce
  10. 2 tspsalt
  11. 1fresh ground pepper to taste
  12. 1choice tomato sauce ( i used paul newman's garlic and italian sausage)
  13. 2 1/2 cupgrated creamy havarti cheese
  14. 1/2 cupchopped green onions ( half for garnish)

    preheat oven to 375°F

  2. 2

    clean zucchini, cut off ends and carefully cut in half lengthwise. scoop out seeds to about a half inch thickness throughout the boat.

  3. 3

    combine meat, herbs, vegetables, egg, bread crumbs, oil, and seasonings into large bowl, mix well.

  4. 4

    pack meat mixture into zucchini boats. cover with your choice of tomato sauce. make sure the zucchini gets covered too.

  5. 5

    bake at 375°F for about 45 minutes. check to make sure meat is thoroughly cooked. (about 145°F for pork)

  6. 6

    layer cheese ontop of boats and melt in oven. use broil if you want crisper cheese.

  7. 7

    garnish with green onions or fresh basil
